@David: It's an image / text replacement swap method type thingy - instead of using 'display: none;' or 'visability: hidden;' or one of many other methods. I think it's an intelligent way of dealing with alternative content. Many will argue the toss as to which is best but this method is as good as any in my book ...

I almost flamed David because I thought he was talking about Windows not knowing how to handle tool tips (or anything for that matter), but then I did what he said, and he's right: there's "hidden" text that should be ALT/TITLE text for a REAL image, not a background-image.

@Skip - This is really on the first phase of Mojo Java, there will be more design, and a lot of development which will come. I was really expecting this much exposure so soon. The client had a meeting and need the site up immediately for a presentation. Hence, not everything has been fully dialed in or developed.
@David Harsha & Aaron - The image replacement technique wasn't intended to be a shady method of adding keywords. I would be curious to hear what people thought about the semantics of this method.
@David - Since the client wanted to capture a Bistro-like feel. I feel I achieved the result partly in using a loose grid for this layout. So, the text follows the loose guides of the grid. Besides, my subconscious can still hear my former instructor wanting more "thumb room" or white space where you would hold a printed piece. I wanted the content area to resemble a printed menu, or something like that.
I do get a lot of questions about that, I may need to rethink it.
